Carnosin und Anti-Glycation

Der Prozess der Verzuckerung (Karamellisierung) kann durch Carnosin gebremst werden. Das gefährliche “cross-linking” (Verbindungen zwischen Eiweißen) wird somit verhindert.
Im folgenden Artikel wird auch die Funktion von Carnosin als ACE Hemmer beschrieben.
